Turkey Surprise (aka mom’s turkey casserole aka the best part of holiday leftovers)
Ingredients
3 Tbsp. butter
¼ cup chopped green peppers (about ¼ to ½ of a whole pepper)
3 Tbsp. chopped onion (onion powder can also work, but only use 1 Tbsp)
1 can (10.5 oz) cream of chicken soup – undiluted
1 cup (8oz) sour cream
2 cups diced cooked turkey (it’s best with a 50/50 mix of light and dark meat)
3 cups slightly undercooked egg noodles (so they don’t get mushy while baking in liquid)
1 can (6oz) french’s crispy fried onions (or get two. Yeah. Get 2)
1 cup light cream (optional… but use it. The casserole can get a little dry without it)
Directions
1. Preheat oven to 350°
2. Sauté green pepper and chopped onion in the butter
3. Remove from heat, stir in soup and sour cream
4. Combine mixture with noodles, ½ the can of fried onions, and turkey.
5. Add light cream to achieve desired creaminess (it will dry out a little as noodles absorb liquid during baking)
6. Place it all in a greased 2 quart casserole (then lick the spoon)
7. Top with the other ½ can of fried onions (or add more. It’s better with more. Seriously, add more. That’s why I said to get 2 cans)
8. Cover and bake for 25 minutes, then remove cover and bake 5 more minutes to crisp up the onion topping.
9. let it rest for about 5-10 minutes, it will be lava. Then shovel it into your facehole.
